The process of pounding the chicken breasts, dredging them in rice flour and frying them in olive oil until lightly browned but not all the way done before baking really seals in their juices. It's worth the trouble. We use this cooking technique catering all the time. Most weddings like to have a chicken breast option and we've found this is the best way to keep this cut of chicken juicy & tender. After making thousands of Chicken Piccata servings, I can safely say it works without fail. Using rice flour makes the dish gluten free but of course All Purpose Flour is fine.
