Shakshuka Verde (Green Eggs & Yam)

This is my take on Shakshuka using tomatillos instead of tomatoes. It's basically eggs poached in a green tomatillo sauce.
This is a super quick and easy recipe for breakfast or brunch. You just throw the ingredients for homemade tomatillo sauce in a blender and presto, it's pureed in a few minutes. Pour the sauce in a skillet and simmer.

Break the eggs gently into the simmering sauce & poach. It's that simple! I made a side of thinly sliced sautéed yams and garnished with fresh avocado slices and cilantro.
