Eggplant Parmesan & Ricotta Bake

This dish of roasted eggplant with three cheeses and fresh tomato sauce easily falls into the category of comfort food.

The twice baked eggplant becomes so tender it melts in your mouth but keeps its integrity holding the gooey dish together. The ricotta mixture tends to puff up slightly when baked making the dish not feel too weighted down with melted cheese. The layers all come together

nicely for a main course or as a side dish to grilled Italian Sausage with a fresh green salad. Comfort food doesn't require falling snow and a fire in the fireplace. I'm kind of an all season comfort food lover. Or maybe, I find comfort in all things delicious.
