Pork Tenderloin with Molé Spice Rub

Served with roast winter squash and a green salad. The spices in Mexican Molé sauce turned into a rub will get your taste buds ready for fall. I sprinkled some of the spice rub on the winter squash, too. The cinnamon, cloves, cocoa, & red chile complimented it perfectly.

This past Labor Day Weekend we enjoyed hiking & swimming in the Rio Grande Gorge and grilling and eating on the patio, and on Tuesday night the cold front blew in and left 5 inches of snow at our house with tree branches bent over to the ground. What a difference a day makes. Luckily, it was in the forecast so I was able to harvest most everything from the garden. I'm hopeful we're not skipping Fall and going straight into Winter. But, while the chill is in the air it's time for soups, baking, roasting & braises. Mmmmm.
